I don't miss the labor issues, the know-it-all reviewers/keyboard warriors, the struggle to pay the bills, or the unceasing and relentless hours.Chef Edhttps://www.blogger.com/profile/05093314323621833245noreply@blogger.comtag:blogger.com,1999:blog-7459081303994947139.post-4367814583614050212022-11-27T01:03:05.911-08:002022-11-27T01:03:05.911-08:00Yeah...you still miss the rush 😄 🤣. Can't believe it's been 20 years now since I started as your sous and we bled on a line together. Cooking in all these random kitchens now in the private game is so strange and foreign still. Someday you and I will get to be confused in a kitchen together again lol. Today, Ann and I were working an old Sunday New York Times crossword puzzle which had the clue "Devils-bones," a term that neither of us had ever heard. It ended up containing one of the four letters in the entire puzzle that we could not puzzle out without help. We had __ A M and the answer proved to be Y A M.

On googling for an explanation, the search engine returned pictures very similar to the one that I took above, of a plant called Diascorea villosa, with common names wild yam, colic root, rheumatism root, devil's bones, and fourleaf yam.

I stand corrected.Chef Edhttps://www.blogger.com/profile/05093314323621833245noreply@blogger.comtag:blogger.com,1999:blog-7459081303994947139.post-63104181013547229342020-09-11T14:01:48.787-07:002020-09-11T14:01:48.787-07:00I've used both and it doesn't really matte...I've used both and it doesn't really matter. In May 2017, we did a week-long farewell tour along the AT in Western NC and VA and Linville was one of the highlights. Here are a few photos from the falls: https://mangiabeve.blogspot.com/2017/05/linville-falls-linville-nc.htm. I have only section-hiked the AT and have covered most of it from Springer to the Mason-Dixon line. My wife and I plan to thru-hike it once our dogs are gone, as sad as that will be.Chef Edhttps://www.blogger.com/profile/05093314323621833245noreply@blogger.comtag:blogger.com,1999:blog-7459081303994947139.post-90291126276865432882018-04-07T19:34:22.595-07:002018-04-07T19:34:22.595-07:00I enjoyed reading all three days of your Dolly Sod...I enjoyed reading all three days of your Dolly Sods trip last July. Sure, we've visited the area, but still I don't know it in the sense that I know Virginia where I was born and raised and where I have spent the vast majority of my life.

Here I know most things that I see both flora and fauna, can identify the birds by their calls, know when the seasons change, how our weather patterns go, which mountain is which, when to plant the garden, and on and on, things born of a lifetime here. In Oregon it will all be new and for a time, it will all be firsts for us. That's super exciting!

As for beer, it is so different now than it was formerly: you can find a great local beer almost anywhere in Virginia now. The only way to learn is to keep trying and could learning be any more fun than that? As for us, fear not. Though Pinot Noir is motivating our move to Oregon wine country, we are also moving to one of the brewing capitals of the country.

All our best wishes to you. And there are those beers you talk about and us being total novices but enjoying a good glass of the hops, we like to learn. The most important reason though, I wanted to wish you and Ann bon voyage before you head to Oregon, a great state and one Gregg and I have visited several times over the years. Wishing you both many happy years full of great adventures in your new home.
